Single oatmeal apple cookie // fresh cookie fast
Sometimes you need a hot-from-the-oven cookie. You don't need it to be highly caloric or gorgeous. You just need it fast.
In approximately 12 minutes, you can be seated on your couch, feet up, breaking off chunks of this soft, warm, larger-than-your-fist cookie. Be sure to get a piece of apple in every bite.
Single Oatmeal Apple Cookie
(inspired by Stuft Mama)
1/3 cup old-fashioned oats
1 tablespoon white whole wheat flour
1 tablespoon unsweetened applesauce
1 tablespoon + 1 teaspoon milk
1/2 tablespoon almond butter
1/4 teaspoon baking powder
1/2 cup chopped apple
splash of vanilla
generous dash of cinnamon
Preheat oven to 350 degrees. Mix together all ingredients in a medium bowl. Line a baking pan with parchment paper. Scrap dough onto prepared pan, and shape into a disc. Bake 8 - 10 minutes.
Makes 1 cookie

Interesting that you baked yours in the toaster oven. Sometimes things burn because they are so close to the elements, but it looks like you didn't have that problem. We don't regularly have almond butter on hand. What would you substitute?
ReplyDeleteI'm a big fan of baking small quantities in the toaster oven. It just heats up so quickly. I haven't tried peanut butter in this, but I feel confident that it would work. I plan on trying it as soon as I finish my jar of almond butter. :-)
